Antenna tuning projects needing assistance

I am currently attempting to work on a couple of antenna projects, but am running into a bit of difficulty.
The first project is to convert a commercial band (155-160MHz) folded dipole antenna to ham band. I found a suggestion online, but when I tried the "fix" I get erratic readings with the MFJ-259 analyzer I am using to check my tuning. The analyzer isn't far off, but still doesn't agree with my inline RadioShack watt/SWR meter. Readings minimum are about 2.0 swr which is too high for many radios today.
The second project is to get my 10m mobile radio setup as a base with a temporary mag-mount antenna converted from CB/11meter to 10 meter. The MFJ-259 indicates it is tuned for too low a frequency and is very narrow in its bandwidth and is high on SWR throughout the range. I adjust the whip from barely enough to secure the set-screw down to all the way shortened as much as it can go with no appreciable difference in the SWR or bandwidth readings. My other RadioShack 3-30MHz field strength/SWR meter won't even calibrate to begin checking the tuning (this is the meter I used originally when setting up the mobile antenna). I am looking online for a better manual for the Shack meter and the MFJ-259 as well.
Any suggestions on either project?
